Japanese Blue Steel #2, or "Aogami" #2, is a revered high-carbon steel alloyed with low amounts of chromium and tungsten. It strikes an excellent balance between durability, edge retention, and ease of sharpening. Slightly more ductile than Blue #1, it's widely used in crafting traditional Japanese knives, beloved by chefs for its resilience and sharpness, albeit is slightly softer than Blue 1.

Great petty. THIN behind the edge.

Got this petty about two weeks ago, been using it every day at work, it comes out of the box ridiculously sharp, stays that way with a bit of honing every other day. SUPER thin behind the edge. Used it to slice some sizable Mac nuts the other day at work and it had no problem making clean cuts through them. The factory patina on this knife is also incredible. Haven’t had to worry about rusting or flash rust at all, even when left out for a minute or two.
