An In depth look

Blade Type
The Gyuto knife, a cornerstone of Japanese culinary tradition, is a versatile, all-purpose chef's knife. Its name, translating to "beef sword," reflects its proficiency in slicing meat and in more modern times vegetables. However, its slightly curved blade excels in chopping, dicing, and mincing, making it indispensable in any kitchen.

Steel Type
Japanese White Steel #2, a traditional high-carbon steel, is cherished for its purity and fine grain structure, enabling razor-sharp edges, at the cost of being reactive. It is one of the easiest steels to sharpen, but cannot be left wet for even short periods otherwise rust spots can occur. If you’re fastidious in your knife maintenance, this knife can steel can be extremely rewarding to use.

Care Information
This knife is made from a high-carbon, semi-stainless steel and will be robust and resistant to rust. While it will not rust quickly like pure carbon, it is still best practice to not leave this knife wet for extended periods as it's stain-less, not stain-none! A light patina (colouration and seasoning of the steel) will still form over time.

Introducing
Yoshikane
With a history spanning over 100 years, Yoshikane Hamono stands among Japan’s most revered knifemakers — a name synonymous with exceptional craftsmanship and understated refinement. Based in Sanjo, Niigata, their blades have earned global recognition for their performance, balance, and meticulous finish.
One of their most celebrated offerings is the SKD steel series — featuring a semi-stainless high-carbon core clad in stainless steel. The blades showcase a distinctive wide-bevel grind with a shallow hammer texture that sits stylistically between nashiji and kurouchi finishes. Paired with traditional burnt chestnut handles, each knife reflects Yoshikane’s dedication to consistency, craftsmanship, and timeless design.
Built for serious cooks who value cutting performance as much as aesthetic harmony, Yoshikane knives represent the finest of Japan’s blacksmithing legacy.

Some of our reviews
This thing IS THE BUSINESS!
Words can't explain how amazing this knife is to use and gaze at! It's my second bunka and my go to knife for everyday prep. Gyuto's aren't getting a look in at the moment. I LOVE it. Thanks Chefs Edge 👊🏽

Super Thin Bevels
The bevels being so thin makes it easy to achieve a crazy sharp edge and cut dense vegetables rather than splitting them. The kiritsuke tip also makes precise cuts such as on garlic possible. A pleasure to use

Great product, great service
Very happy with my purchase. First time customer, ordered and received a knife that had a chip which occurred during shipment. The staff at Chefs Edge were very prompt in communication and really helpful in resolving the matter. They sent out a new knife and arrived in time for a birthday. The knife itself is great quality and looks better than the photos. Overall, very happy and will be a return customer!

Beautiful Knife
As the title says, an absolutely beautiful knife. Even better than the photos. Shipping was also reasonable. Very happy, would definitely recommend.

Fantastic knife with beautifully curated handle
Got this as a gift for one of my younger cooks who has been going above and beyond this year. Not only is the caretaking aspect of high carbon steels such as shirogami a great teacher for any future knives they may own, but its such a beautiful tsuchime finish with a fantastic grind that I found myself drooling over it aswell. 10/10 recommend not only Tsunehisa as a maker but Chefs Edge as a curator and purveyor of immaculate kitchen knives.

Best bread knife ever !
it was best decision for me to purchase this knife! Smooth and effortless prep! Especially working with 300-500 portion !

Perfect knife!
It was absolutely razor sharp knife. Lightweight even if it’s 240mm knife. Thanks chef’s edge, it came also fast and secured with a beautiful delivery box.
