Blade Type
The Kiritsuke knife, a symbol of expertise in Japanese cuisine, is traditionally used by executive chefs. This multi-purpose knife combines features of a slicer and a vegetable knife, with its angled tip and long blade. It excels in precise slicing, chopping, and julienning, making it a prestigious and versatile tool.

Steel Type
Japanese Ginsan steel, also known as Silver-3 or G3, is an underrated high-grade semi-stainless steel loved by many for being in the ‘goldilocks zone’ of knife steels. It holds a very respectable edge, but is effortless to sharpen. It is considered the semi-stainless version of White 2. It is the knife steel of choice for many home cooks and professional chefs alike.

Care Information
This knife is made from a high-carbon steel and as such, will require a little more care than a regular off-the-shelf knife. It must be dried shortly after use, as prolonged exposure to moisture can cause rust spots to appear. A very light coat of oil during storage also helps to prevent rust spots. A patina (colouration and seasoning of the steel) will occur with use.

HADO Sakai are, in our opinion, among Japan's premier knife makers. Everything about their ranges is exquisite. The packaging has been custom designed in collaboration with French artist Phillipe Weisbecker, of which this packaging houses one of the finest blades we have ever seen. The Blue 1 Damascus is a special collaboration between Chefs Edge and HADO.
super cool knife
The Ginsan steel is holding a decent edge and because it’s semi stainless you can relax a little on the maintenance requirements. The normal Hado finishing is evident, the quality is very high. The clean look of the blade has very nice detailing when you see it up close.
Beautiful Knife
I usually prefer a knife with a bit more flashiness to the design but there's just something to be said about the understated elegance of the nice clean design of this knife. Feels great inthe hand and cuts through meat and vege like nobody's business!
