Blade Type
The Nakiri knife, revered in Japanese culinary traditions, is engineered for exceptional vegetable cutting. Featuring a distinct, straight-edged, and rectangular blade, it excels in creating uniform, precise cuts and aesthetic presentation. Its technical design ensures efficiency and precision, making it a valuable tool for both professional chefs and home cooks.
Steel Type
Japanese Blue Steel #2, or "Aogami" #2, is a revered high-carbon steel alloyed with low amounts of chromium and tungsten. It strikes an excellent balance between durability, edge retention, and ease of sharpening. Slightly more ductile than Blue #1, it's widely used in crafting traditional Japanese knives, beloved by chefs for its resilience and sharpness, albeit is slightly softer than Blue 1.
Care Information
This knife is made from a high-carbon steel and as such, will require a little more care than a regular off-the-shelf knife. It must be dried shortly after use, as prolonged exposure to moisture can cause rust spots to appear. A very light coat of oil during storage also helps to prevent rust spots. A patina (colouration and seasoning of the steel) will occur with use.
Introducing
Morihei
Based in Asakusabashi, Tokyo, Morihei is a revered name in the world of Japanese blades and sharpening, with a legacy spanning over 100 years. At its peak, more than 20 groups of blacksmiths and sharpeners worked under the Morihei name — a testament to its deep roots in the craft.
Renowned for its extraordinary collection of whetstones and natural sharpening stones, Morihei remains one of the last companies in Japan to uphold long-standing relationships between blacksmiths and traditional stonemakers.
This is by all accounts made by Kyohei Shindo and identical to blades sold under tat name. As such it has all the traits and characteristics the brand is known for. Razor sharp almost foil thin edge OOTB. Amazing thin S grind and better fit and finish than others have sometimes reported. Still very much handmade and not a jewel like work of art, but no less functional or aesthetically pleasing. The one minor flaw is that the blade is slightly bent at the heel causing a hook that can be felt with a finger. I am sure it can be easily fixed and will take it to a shop if needed, but it does not interfere with stroping and I am likely months away from using the stones. I should also add that when it was about to ship I inquired about the handle as I avoid anything with Buffalo horn, and customer service was incredibly gracious and offered to substitute their Dark Maple handle for the standard. I still received the knife in under 1 week and CE did not charge for the change, so I am needless to say thrilled with their service.
Fantastic knife. An absolute joy to use.
This is one of best Nakiri at this price-point.
