An In depth look
Blade Type
The Petty is your smaller knife for delicate work. Think mincing garlic, trimming up chicken thighs or meats, skinning fruit, and just about anything else the Bunka or Gyuto is too large for. It's an essential part of your knife range and we use ours almost daily.
Steel Type
Hand-forged from advanced VG-XEOS stainless steel in the prestigious Takefu Knife Village, this knife embodies modern Japanese craftsmanship. Its fine-grained steel offers outstanding stain resistance and a perfect harmony of cutting performance and refined aesthetics.
Care Information
This knife is made with a stainless steel and is easy going and low on maintenance. It has high chromium content, meaning it is generally considered safe to leave wet on the board for short periods of time. is still best practice to not leave this knife to air dry as it's stain-less not stain-none! Wipe down after washing the knife and store away from any sources of moisture.
Introducing
Nigara Hamono
Nigara Hamono of Aomori are truly some of the most experienced knifemakers in Japan. Headed by Go-Yoshizawa San whom we met personally in 2023 (what a legend), they are now on their 8th generation of blacksmiths, they are masters at stainless Damascus forging and heat treatment. They supply knives of impeccable finish with some of the best performing knives we've come across. They can also do it all, from forging Honyaki, experimenting with new steels and wild finishes, to creating flawless daily workhorse knives that don't break the bank.
First off, My collection is almost entirely Yoshikane, so I wanted to buy a Yoshikane Petty and couldn't find one anywhere so I had heard enough about Nigara Hamono to take a shot. I went with the 150 mm as an all around knife to use in the kitchen for all purpose tasks such as slicing boneless meats and smaller vegetables. In the hand , feels a lot lighter than what I'm used to with the Yoshikane knives. The handle is slightly smaller and with the maple handle , it's definitely lighter than some of the more dense wood handles such as the bubinga or the ebony which I really prefer. The finish of the blade is amazing. Mine has the damascus tsuchime which is what Nigara seems to lean toward when crafting their blades. For my daily tasks this knife has performed very well and when slicing through veggies, it doesn't get a ton of food sticking to the blade. I've only had the knife a short time, but from what I have heard the razor sharp edge this knife comes with should retain that edge pretty well with the VGXEOS construction. It's a 61 on the hardness scale so not quite as hard as some of my other knives which makes this one a little more forgiving. I would almost give this one 5 stars but it's not my favorite knife in the hand. It's very subjective and I feel most people would love this petty. If you have smaller hands or prefer super light knives then it's a 5 star knife for you.
